Spicy Scrambler Breakfast Sandwich

Ingredients (1 serving)
1 Arnold® Sandwich Thins® Rolls 100% Whole Wheat Roll, toasted
1 tablespoon olive oil
2 egg whites
1 tablespoon red pepper
¼ cup steamed broccoli florets
½ avocado, mashed
1 tablespoon parsley
Sriracha, to taste
- In a medium skillet over medium heat, warm olive oil. Scramble egg whites with red pepper and broccoli. Set aside.
- Spread mashed avocado on the bottom half of the Sandwich Thins roll. Layer on scrambled eggs and veggies, followed by a sprinkle of parsley. Finish with a drizzle of Sriracha and top with Sandwich Thins roll lid.
