Leftover Turkey Mexican Torta in Adobo Sauce

1 package of Arnold Sandwich Thins Honey Wheat rolls
2 cups leftover turkey, shredded (can use rotisserie chicken as well)
1 avocado, sliced
1 tomato sliced
½ onion, thinly sliced
1/3 cup queso fresco
½ cup refried beans
Pickled jalapeño
Adobo Sauce:
1 can chipotle peppers
½ can fired roasted red peppers
1 lime, juiced
2 tbsp olive oil
  1. For sauce, using a food processor or emersion blender, blend all ingredients together until smooth and season with salt and pepper. 
  2. Open Sandwich Thins rolls and spread refried beans and top with shredded turkey, tomato, avocado, onion, and jalapeño. 
  3. Sprinkle queso fresco and drizzle with Adobo sauce.
