Leftover Turkey Mexican Torta in Adobo Sauce

1 package of Arnold Sandwich Thins Honey Wheat rolls
2 cups leftover turkey, shredded (can use rotisserie chicken as well)
1 avocado, sliced
1 tomato sliced
½ onion, thinly sliced
1/3 cup queso fresco
½ cup refried beans
1 can chipotle peppers
½ can fired roasted red peppers
1 lime, juiced
2 tbsp olive oil
- For sauce, using a food processor or emersion blender, blend all ingredients together until smooth and season with salt and pepper.
- Open Sandwich Thins rolls and spread refried beans and top with shredded turkey, tomato, avocado, onion, and jalapeño.
- Sprinkle queso fresco and drizzle with Adobo sauce.
