Thai Rainbow Roll

Ingredients (1 Serving)
1 Arnold® Roll
1 cucumber, sliced
½ red bell pepper, thinly sliced
½ yellow bell pepper, thinly sliced
Purple cabbage, thinly sliced
2 baby carrots, thinly sliced
2 tablespoons peanut sauce
  1. Layer cucumber, bell peppers, cabbage and carrots on the bottom half of the sandwich thin.
  2. Drizzle with peanut sauce and top with the sandwich thins lid.
