Apple Chicken Salad Sandwich

Ingredients (2 Servings)
2 Arnold Rolls
5 ounces chicken breast, cooked and shredded
2 tablespoons Greek yogurt
½ teaspoon Dijon mustard
⅛ teaspoon onion powder
1 tablespoon walnuts, chopped
1½ tablespoons dried cranberries
¼ cup diced Granny Smith and Honeycrisp apples, diced
Salt and pepper, to taste
¼ cup baby spinach
Directions 
  1. Combine chicken, yogurt, Dijon mustard and onion powder in a medium bowl and mix together thoroughly. Fold in walnuts, cranberries and apples and season with salt and pepper, to taste.
     
  2. Layer spinach on the bottom halves of the Sandwich Thins roll. Top each with a scoop of apple chicken salad and a Sandwich Thins roll lid.
