Apple Chicken Salad Sandwich

Ingredients (2 Servings)
2 Arnold Rolls
5 ounces chicken breast, cooked and shredded
2 tablespoons Greek yogurt
½ teaspoon Dijon mustard
⅛ teaspoon onion powder
1 tablespoon walnuts, chopped
1½ tablespoons dried cranberries
¼ cup diced Granny Smith and Honeycrisp apples, diced
Salt and pepper, to taste
¼ cup baby spinach
- Combine chicken, yogurt, Dijon mustard and onion powder in a medium bowl and mix together thoroughly. Fold in walnuts, cranberries and apples and season with salt and pepper, to taste.
- Layer spinach on the bottom halves of the Sandwich Thins roll. Top each with a scoop of apple chicken salad and a Sandwich Thins roll lid.
