Zesty Cuban Panini with Chilis and Sun Dried Tomatoes

Ingredients (1 serving)
4 slices ham
2 slices Swiss cheese
1 dill pickle, sliced
1/4 cup mayonnaise
2 adobo chilis in sauce, chopped
salt & pepper
sun dried tomatoes to taste

In a small bowl mix mayonnaise and chipotle chilis with a pinch of salt & pepper, set aside. Preheat a panini grill or use skillet. To assemble sandwich, spread each side of bread with mayo mixture, place slice of Swiss cheese on bottom of bread, top with ham, pickle, and sundried tomatoes. Place sandwich on the grill. Cover the grill with a heavy skillet, cook until lightly browned and the cheese has melted.
