Moroccan Rainbow Carrot Sandwich with Spicy Orange Dressing

Ingredients (2 servings)
2 slices of Arnold® Whole Grains Oatnut® Bread, toasted
2 tsp. extra virgin olive oil
1 tsp. lemon juice
1 tsp. harissa
1 tbsp. orange marmalade
¼ tsp. each of ground coriander & ground cumin
⅛ tsp. ground cinnamon
1 pinch each of salt & black pepper
3 medium assorted rainbow carrots, shaved into long ribbons with a vegetable peeler
½ c. loosely packed arugula
2 tsp. fresh mint, chiffonade
2 tbsp. golden raisins
2 tbsp. chopped roasted pistachios
3 tbsp. crumbled feta
¼ c. roasted garlic hummus

In a medium bowl whisk together the oil, lemon juice, harissa, marmalade coriander, cumin, cinnamon, salt, & pepper. Add the carrots, arugula, mint, & raisins.

Toss mixture & let sit for 5 minutes.

Gently stir in the pistachios & feta.

Spread hummus over each slice of toast, & top with the carrot mixture.
