Flavor-Packed Blackened Salmon Sandwich

Ingredients (1 serving)
1 Arnold roll
4 oz. salmon, skin removed
1/8 small red onion, thinly sliced
1/8 c. low-fat plain yogurt
1/4 bunch arugula, stems trimmed
3/4 tsp. horseradish
3/4 tsp. honey
1/2 tsp. coarse salt
1/2 tsp. paprika
1/4 tsp. cumin
1/4 tsp. fennel seed
1/4 tsp. dried oregano
1/4 tsp. dried thyme
1/8 tsp. ground black pepper
1/8 tsp. ground cayenne pepper

Preheat oven to 300 degrees. In a small bowl, mix the following spices together to create a blackened seasoning: salt, paprika, cumin, fennel seed, oregano, thyme, black pepper, and cayenne pepper. Rub the seasoning on both sides of the salmon filet and let marinate for 5 minutes. Pan sear each side of the filet on high for 1 minute or until lightly blackened. Place the filet in a baking dish and allow the filet to finish in the oven for 10 minutes.

To make the dressing, mix yogurt, horseradish, and honey together. Separate the Sandwich Thins roll and spread dressing on the bottom half. Place the salmon filet over the dressing. Top with arugula and red onion, and cover with the top half of the roll. Enjoy!
