Broccoli-Blueberry Sandwich

Ingredients (1 serving)
1 c. small broccoli florets, blanched for 1½ minutes
½ c. fresh blueberries
3 tbsp. chopped red onion
1 tbsp. chopped peperoncini
2 tbsp. toasted slivered almonds
1 tbsp. extra virgin olive oil
2 tbsp. Greek yogurt
1 tsp. honey
½ tsp. lemon zest
1 tbsp. lemon juice
¼ tsp. minced fresh rosemary
¼ tsp. salt
1/8 black pepper
2 oz. crumbled goat cheese

Combine broccoli and the next 4 ingredients. Whisk together olive oil, yogurt, honey, lemon zest, lemon juice, rosemary, salt, and pepper. Pour dressing over broccoli mixture; gently stir to coat. Put broccoli mixture on 2 slices of bread. Sprinkle with goat cheese. Top with remaining bread.
