Beach Picnic Nutty Peach And Chicken Sandwich

Ingredients (2 servings )
1/4 cup fat free Greek yogurt
1 tablespoon almond butter
Juice of 1 lemon
1 pinch sea salt
1 pinch ground black pepper
1/4 teaspoon ground cumin
1 teaspoons fresh basil, chiffonade
1 small ripe peach, pitted and diced
1 cup diced cooked boneless skinless chicken breast
1 tablespoon finely chopped red onion
1 tablespoon chopped pistachios
2 Boston lettuce leaves
1/2 small avocado, thinly sliced
2 teaspoons honey mustard

In a medium bowl whisk together the yogurt, almond butter, lemon juice, salt, pepper, cumin, and basil. Stir in the peach, chicken, onion, & pistachios. Place the bread 2 slices of bread on a flat surface. Top with lettuce leaves avocado slices, & the chicken mixture. Spread mustard over remaining bread & place mustard side down over each sandwich. Serve.
