Avocado Strawberry and Goat Cheese Sandwich
Ingredients (1 serving)
  • 2 slices of Arnold Extra Grainy Flax and Sesame Seed® OR 1 Honey Wheat Sandwich Thins ® rolls
  • 1/2 ripe avocado
  • 2 strawberries, thinly sliced
  • 2T goat cheese, crumbled
  • 1t lemon juice
  • 1/8t salt
  • Black pepper + sea salt to top
Directions

Toast the bread and place on a cooling rack to stay crisp but not hot. Mash avocado with a fork and then mix in the lemon juice and salt. Add as much avocado to the toast as desired. Then add one layer of thinly sliced strawberries. Top with salt, pepper, about 2T crumbled goat cheese and then cover with the second slice of bread.
